To caramelise actually means to heat sugar or syrup severely gently until it turns brown. Onions or other foods cooked by this method are very soft, sweet and mat taste only just slightly burnt. There are several ways to caramelise onions. The classic method is to boil them until soft (about 15 min), dry them and then cook very calmly (usually on the hob, though you can put them in the oven with extra butter) in butter and sugar until golden-brown. About 1oz butter and partly a tablespoon of sugar will do for six small onions.
Another way, recommended by Delia Smith, is to simmer the onions, sugar and enough water to cover them within a pan until soft, then toss the onions over a high warmth till the water evaporates and the onions turn brown.
A third way is to fry them in grease or butter till soft, then add sugar and fry till brown. A teaspoon of water can be added if the onions start to stick.
