What Is Hominy?

Go to a diner in the southern United States, and hominy will often be somewhere on the menu. Hominy was made over 10,000 years ago surrounded by the region of the world that includes Mexico, Guatemala, Belize, Honduras, El Salvador, Nicaragua and Costa Rica. To prepare hominy, corn is soaked in lye water to remove the germ and the hard shell from the kernel. The result is mild and easily digestible. Hominy is used as the basis for soups, stews, breads, tortillas and grits.  

Back in the 1800's family in the Southern United States often had an ash hopper. Running dampen over the ashes produced lye, which could be used to make hominy.  A home might also have a samp mill, an oversized mortar and pestle created from a tree stump and a wood block. The samp mill ground corn to produce flour.  The European settlers learned these skills from the Native Americans.
