Depending on the meat, you lightly oil a saucepan and bring the heat up to atmosphere high.  Put in the meat without crowding the saucepan (you may enjoy to leave some of the meat out at first) and stir the meat occasionally until it's changed from red/pink to brown.  Browning doesn't necessarily cook the meat all the way through, but it's used to to some extent cook it so that it can be fully cooked later as a component of a larger dish.
