What Is Baked Alaska?

Baked Alaska is basically a sponge which is then topped with rime cream and covered with meringue. The mixture is then baked in a hugely hot oven for about five minutes.
The trick with Baked Alaska is to ensure that the meringue bakes (runny egg white is not highly appealing) whilst making sure that the ice cream does not melt. Usually the ice cream is frozen exceptionally hard to increase melting time, but the meringue in effect act as a sealant, not letting the warm air in and thus preventing it from melt.
The name is derived from something hot (Baked) with something cold (Alaska).
It became impressively popular in the 1970's when it was seen as a particularly sphisticated dish. After that it became regarded as something rather 'naff' but have recently begun to enjoy a revival. Although it is somewhat of a fiddly dish and when it go wrong it makes a spectacular mess of the oven !
