Food which is both low on potassium and carbohydrates is highly unrecommended as it can result in dehydration and/or a disease known as ketosis.
I hold a few food products that are low in both of the mentioned things but i recommend you to consult a doctor before the intake of this diet.
The only type of food available when your request is taken into consideration are fruits and vegetables. Fruit such as apple, grape and grapefruit are just the thing but taking in more then one of these fruits can makes it a giant potassium food.
Vegetables are a  good replacement of junk food and/or other fating food. Vegetables such as lettuce is both low in carbs as economically as potassium.
