I would vote the best way to manage customer requirements and their expectations is to set proper expectations at the beginning,
this system during your initial conversation ask questions until you are sure as to what the customer really wants.once you have established what the customer wishes,you set expectations by what you know you and your company can provide.for example,if you need to get something done in ten days,and you know that it usually takes your company at least two weeks, you need to put in the picture the customer that it will take three weeks.therefore you are giving yourself more time just within case something comes up to delay you even more,secondly if it comes in smaller amount then three weeks you look like a hero.
